Zesty Coconut Lemon Balls

  • 1 1/2 cups desiccated coconut
  • 1/2 cup of desiccated coconut or sesame seeds for coating
  • 1 cup almond meal
  • 4 tbsp extra virgin coconut oil
  • 2 tbsp pure maple syrup or raw organic honey
  • Zest and juice of one lemon
  • 1 tsp pure vanilla extract
  • A pinch of sea salt
  1. Put all of ingredients (except for coconut/sesame seed for coating) into a blender or food processor.
  2. Blend for 1-2 minutes or until the mixture starts to mix together like dough.
  3. Roll into small balls.
  4. Place the extra coconut or sesame seeds in a small bowl & roll the balls until well coated then transfer to a plate.
  5. Place in the fridge for at least half an hour to set.
